Cast Iron Ribeye Steak

Yield 1 serving

 

Ingredients

 

  • 1 Ribeye Steak (at room temperature) 

  • Olive Oil

  • 1 of stick of butter

  • 2 Sprigs of fresh rosemary

  • 3 Whole garlic cloves 

  • Sea Salt & cracked black pepper (Steak seasoning works too if you have a favorite)

  • 1/4 cup of soy sauce

 

  1. Drizzle steak with olive oil, season generously on both sides with salt and pepper (or steak seasoning) Optional: marinate for 1-4 hours in refrigerator

  2. Preheat cast iron skillet with olive oil

  3. Place steak in skillet with soy sauce, garlic, rosemary and 1/2 of the butter (place some of the butter directly on top of the steak)

  4. Cook for 5-7 minutes on each side (or to the wellness you prefer your steak)

  5. Scoop the butter & other mixtures from skillet onto the steak throughout the entire cooking process 

  6. Add the remainder butter when you flip the steak.

  7. Remove steak and wrap with foil (pouring butter mixture onto the steak) to rest about 3-5 minutes

BLACKENED TILAPIA WITH GARLIC BUTTER & CRAWFISH SAUCE

Cook 10 minutes 

 

Yield 1 serving

 

Ingredients

 

  • 1 Tilapia fillet (at room temperature) 

  • Olive Oil

  • tablespoon butter

  • 1/4 cup of Blackened seasoning (recipe below)

Blackened Season recipe, equal parts:

  • Paprika

  • White pepper

  • Black pepper

  • Thyme

  • Oregano 

  • Cayenne Pepper

  • Sea Salt 

  • Onion Powder

  • Garlic Powder

Recipe for Crawfish sauce: 

  • (1 cup) peeled crawfish tails

  • 1/2 cup of peeled & deveined shrimp (optional)

  • 1/4 cup of season blend or diced onions 

  • 2 teaspoons of Creole Seasoning or leftover blackened seasoning

  • 1/3 cup chopped green onions

  • 1/2 teaspoon Worcestershire sauce

  • 1/2 teaspoon hot pepper sauce

  • 1 cup heavy cream

  • 1 tablespoon butter

  • 1/2 teaspoon of Minced Garlic

  • Pair entree with wild rice 

 

  1. Season fish and set aside. 

  2. Make the sauce first. In a saucepan, drizzle olive oil and sauté season blend or onions

  3. Add garlic & green onions until fragrant 

  4. Season crawfish (& shrimp) with seasoning 

  5. Add Worcestershire sauce, hot sauce, heavy cream and butter. Bring to a light boil.

  6. Add crawfish and/or shrimp. Stir well, cover and reduce heat. Simmer for 10 minutes. 

  7. Prepare wild rice.

  8. Drizzle a cast iron skillet with olive oil, season generously on both sides with salt and pepper (or steak seasoning) Optional: marinate for 1-4 hours in refrigerator

  9. Preheat cast iron skillet with olive oil.

  10. Place fish in skillet with butter 

  11. Cook for 3-4 minutes on each side (or to the wellness you prefer your fish)

  12. Scoop the butter from skillet onto the fish throughout the entire cooking process 

  13. Add the remainder butter when you flip the fish.

  14. Remove fish directly to plate on top of a bed of wild rice and add sauce on top. 

  15. Eat immediately. Enjoy!
